​Vegetarian Spinach and Artichoke Casserole



INGREDIENTS

  1. 2 C pasta (any small size pasta)
  2. 6 Tbsp. Juliann's Extra Virgin Olive Oil
  3. 1 yellow onion, sliced
  4. ¼ tsp. salt
  5. 12-16 oz. fresh spinach
  6. 28 oz. jar of artichoke hearts, quartered
  7. 1 C shredded Italian blend Cheese

DIRECTIONS

  1. Preheat oven to 350 degrees
  2. Cook pasta in boiling salted water until al dente
  3. Spray casserole dish with spray Juliann's Extra Virgin Olive Oil
  4. Heat oil in frying pan, add onions, salt - cook 2 minutes
  5. Add spinach - cook 2 minutes
  6. Stir in artichoke hearts, cook for 1 minute
  7. Add pasta to casserole, stir in sauce, sprinkle with cheese
  8. Bake for 30 minutes until cheese is crusty.
